FAQs
Add spices, chocolate chips (or other kinds of chocolate! ), nuts, flavored extracts, various mix-ins (dried fruits, etc.), and other sugars! To guarantee that your cookies come out perfectly, adjust the baking time and temperature based on any modifications you make to the recipe.
To make cookie dough rollable, make sure it has the proper consistency and texture. You may refrigerate the dough, use the appropriate flour, prevent overmixing, use liquid sparingly, work swiftly, and use parchment paper to help you.
FAQs
Place the slightly cold cookie dough between two pieces of parchment paper and shape it into a rectangle with your hands. Begin rolling the dough away from your body with a rolling pin, turning the dough 90 degrees every few rolls to achieve consistent thickness.
Cookies in various shapes
Drop biscuits are the most basic: Scoop the dough with a spoon or a tiny ice cream scoop and place it on a baking sheet coated with parchment paper. Other methods of shaping include chilling a log of dough and slicing it, rolling and cutting, and piping or using a cookie press.
Roll the dough between parchment or waxed paper sheets.
Roll the dough between sheets of nonstick parchment or waxed paper rather than on a floured surface. Adding more flour to the dough as a consequence of rolling might result in difficult cookies.
Refrigeration causes the flour to completely hydrate and makes the cookie dough firmer. Chilling the dough is essential for cut-out and rolled cookies because it stops the cookies from spreading too much.
Can I roll dough on parchment paper?
A: You may roll out a thin dough without using flour by using parchment paper or plastic wrap. Try the traditional kitchen method of spreading out a thin dish towel, then placing the paper on top to hold it in place. Make sure you use natural parchment that isn’t silicone-coated.
Dorie recommends rolling out the cookie dough before chilling it, but between two pieces of parchment paper rather than on a floured work area. Your highly malleable dough has little chance of sticking to your rolling pin or the kitchen counter since it is sandwiched between parchment.
