  • Cut the ends off each eggplant and slice into thin strips lengthwise. Sprinkle with kosher salt and let aside for 30 minutes on a wire rack. Rinse and wipe dry the strips.
  • In a small bowl, whisk together 2 medium eggs. Combine the remaining coating ingredients (flour, dried basil, parmesan, and oregano) in a separate basin.
  • Coat the eggplant strips in the egg mixture one at a time, then in the dry ingredients.
  • In a frying pan or skillet, heat the oil over medium heat. Cook for a few minutes each side, or until the eggplant slices are golden. Remove from the heat and set the slices on a cutting board.
