Chicken in Red Wine Sauce Using Instant Pot

Add ingredients

Set your Instant Pot to saut mode. 1 tablespoon olive oil should be added to the saucepan. Fry the bacon until the outside is gently browned, about 2 minutes. Place the bacon on a platter. In the pressure cooker, there should be around 3 tablespoons of oil remaining. If necessary, add another tbsp olive oil.

Cook chicken

Using a paper towel, pat dry your chicken thighs. Add them to the pressure cooker in batches if necessary. Cook for about 7-8 minutes, or until the skin is browned on both sides. Place the chicken on a platter. Deactivate the saut function.

Pause and add

Add the wine to the olive oil and mix well. Scrape any browned parts off the pot’s bottom using a wooden spoon (not a metal spoon!). Combine the garlic, tomato paste, thyme, and bay leaf in a mixing bowl. Season with salt and pepper and whisk to combine. Return the bacon and chicken thighs, along with any remaining ingredients from the platter, to the instant pot. Arrange the chicken so that the skin side is facing down, allowing it to absorb more color and taste. Cook for 25 minutes on high pressure.

Make mushrooms

While this is simmering, melt 2 tbsp butter in a medium saucepan over medium-high heat until bubbles form. When the froth has subsided, add the mushrooms and stir until they are soft and lightly browned all over. This might take up to 5 minutes. Season lightly with salt and pepper, then remove from fire and set aside to simmer.
