Ingredients

  • 1 tbsp Olive oil or vegetable oil
  • Back bacon, smoked or unsmoked, 3 oz. Lardons, cut into little pieces
  • 6 boned, skin-on chicken thighs trim excess fat
  • 1 cup red wine, preferably full-bodied Bordeaux
  • 2 garlic cloves, minced
  • 1 tbsp tomato paste
  • 0.5 teaspoon dried thyme
  • 1 bay leaf
  • 3 tbsp unsalted butter
  • 0.5lbs of button mushrooms (quarter if large)
  • 1 tbsp all-purpose flour
  • 0.25 0.5 low sodium chicken stock
  • Buttered broad noodles
  • Salt and pepper (to taste)

Recipe

Chicken in Red Wine Sauce Using Instant Pot

Add ingredients

Set your Instant Pot to saut mode. 1 tablespoon olive oil should be added to the saucepan. Fry the bacon until the outside is gently browned, about 2 minutes. Place the bacon on a platter. In the pressure cooker, there should be around 3 tablespoons of oil remaining. If necessary, add another tbsp olive oil.

Cook chicken

Using a paper towel, pat dry your chicken thighs. Add them to the pressure cooker in batches if necessary. Cook for about 7-8 minutes, or until the skin is browned on both sides. Place the chicken on a platter. Deactivate the saut function.

Pause and add

Add the wine to the olive oil and mix well. Scrape any browned parts off the pot’s bottom using a wooden spoon (not a metal spoon!). Combine the garlic, tomato paste, thyme, and bay leaf in a mixing bowl. Season with salt and pepper and whisk to combine. Return the bacon and chicken thighs, along with any remaining ingredients from the platter, to the instant pot. Arrange the chicken so that the skin side is facing down, allowing it to absorb more color and taste. Cook for 25 minutes on high pressure.

Make mushrooms

While this is simmering, melt 2 tbsp butter in a medium saucepan over medium-high heat until bubbles form. When the froth has subsided, add the mushrooms and stir until they are soft and lightly browned all over. This might take up to 5 minutes. Season lightly with salt and pepper, then remove from fire and set aside to simmer.

Mash

Mash the flour and the remaining 1 tablespoon butter to make a homogeneous paste in a small bowl. This is your mani beurre.

Cook noodles

When the timer goes off, you must manually release the steam from the pressure cooker. Allow the pressure to naturally release from the instant pot. While this is going on, start making the buttered wide noodles. Bring a saucepan of water to a boil, then add the noodles and simmer until tender.

Transfer

Remove the chicken to a platter, leaving the liquid in the saucepan and discarding the bay leaf.

Make sauce

Turn on the saut function and bring the remaining liquid in the instant pot to a boil. Beat in the beurre mani with a whisk until the sauce is glossy and coats the back of a spoon. If the sauce gets too thick, add 1 tablespoon of stock at a time.

Adjust

Season to taste, adding salt and pepper as necessary.

Combine and enjoy

Reintroduce the chicken and mushrooms to the pressure cooker. Heat till hot and serve over buttered wide noodles. And have fun!
