Ingredients

  • 4 pound pork butt roast
  • 2 quarts sauerkraut (can be canned or bagged)
  • pepper and salt
  • half a cup of chicken broth or bouillon diluted in half a cup of water
  • a cup of brown sugar
  • 1 apple (peeled and cut into 1-inch bite-sized pieces)
  • 1 finely chopped onion
  • a smear of butter (optional)

Instructions

  1. Put your instant pot to the Sauté setting. Pour some oil in the bottom and set aside to heat.
  2. While your instant pot is heating the oil, season the pork roast well with salt and pepper.
  3. When the oil is heated, lay the pork roast in it and sear it on all sides. It may take up to 5 minutes for the pork roast to brown, so try not to stir it too much during this time.
  4. Remove the pork roast and place it on a platter after it has gotten some color.
  5. Deglaze the pan with the chicken broth. Let your chicken stock to simmer while you use a wooden spoon or spatula to carefully remove any browned remnants off the bottom of the instant pot from cooking your roast. This enhances the taste of your sauce. At this stage, add your pat of butter, if using, to the chicken broth.
  6. After deglazing your pot, hit Cancel on your instant pot and carefully drop the pork roast back into the pot. Place the sauerkraut and onions on top of the roast, followed by the apples and brown sugar.
  7. Attach the cover to your instant pot and set the valve to Seal. Cook your pork roast for 1 hour or 15 minutes per pound under high pressure before conducting a natural pressure release.
  8. Your wonderful pork and sauerkraut is ready to eat after the pressure in your instant pot has naturally dissipated.
