  • 5 boneless and skinless chicken breasts, sliced into 2-inch pieces
  • 1 cupsyogurt

  • 1tbspchili powder
  • 1tspturmeric powder
  • 1tspcumin
  • 1tspdried cilantro
  • 1tspsalt
  • 1tbspoil for cooking

Masala Curry

  • 2tbspghee
  • cupwater
  • 1cuponiondiced
  • 1cupchopped tomatoes
  • 3tbspyogurt
  • tspfresh gingergrated

  • 1tspgaram masala

Biryani Rice

  • 2cupsbasmati rice
  • 4cupswaterplus more for soaking and rinsing
  • 1tspsalt
  • 1bay leaf

Instructions 

  • Put the sliced chicken into a big, deep basin. Mix in all of the chicken tikka marinade ingredients, making sure each piece is well-coated on both sides. Place aside.
  • Pour the basmati rice into a bowl and cover with cold water until thoroughly covered. Leave for 20 minutes.
  • Drain your basmati rice in a colander after 20 minutes. Rinse well until the water flows clean.
  • In a saucepan, combine 4 cups of water, the salt, and a bay leaf. Bring the water to a boil before lowering the heat to a low setting. Cover and simmer the uncooked, washed rice for 10 minutes. Cook it just halfway through.
  • Drain the rice in a colander and set it aside.
  • Heat 1 tablespoon oil in a large, heavy-bottomed pan over medium-high heat.
  • Add the chicken carefully, reserving the marinade. Cook for 3 minutes each side, or until browned. Reduce the heat to low and cover the pan until the chicken achieves an internal temperature of 165 degrees Fahrenheit. Set aside after removing from the skillet.
  • Increase the heat to medium in the same skillet. Combine two tablespoons oil or ghee, cumin, chili powder, garam masala, salt, and ginger in a mixing bowl. Stir for 15-30 seconds, or until the mixture is aromatic.
  • Stir in the chopped onion until it is transparent and golden.
  • Continue stirring for 1 minute after adding the ginger and garlic.
  • Mix in the remaining marinade, tomato, and water. Increase the heat to medium-high and bring the sauce to a boil.
  • When the water is boiling, add the cooked chicken and yogurt. Cook for one minute while continually stirring. Take the chicken tikka off the heat.
  • Scoop half of the chicken tikka from the pan and put it aside to assemble your chicken tikka biryani. Add half of the semi-cooked rice, followed with the remaining chicken tikka and the remaining rice.
  • Cook for 10 minutes on low heat with the skillet covered.
  • Remove the skillet from the stove and serve.
